Apples a plenty. Not right this moment, but in the fall. Oh-my-lanta. There\u2019s only two old fashioned apple trees at my mom\u2019s house, but boy do they put on the fruit! When Reiner Fruit sent us Lady Alice apples, it gave me the opportunity to test out some more recipes before fall gets here\u2013which will probably be like next week as quick as this year has already gone!<\/p>\n\n\n\n

Crepes<\/strong>:<\/p>\n\n\n\n

  1. 2 eggs<\/li>\n\n\n\n
  2. 1\/4 teaspoon salt<\/li>\n\n\n\n
  3. 1 1\/2 cups of milk<\/li>\n\n\n\n
  4. 1 1\/2 cups all purpose flour<\/li>\n\n\n\n
  5. Powdered Sugar for dusting<\/li>\n\n\n\n
  6. For Ricotta Filling<\/strong><\/li>\n\n\n\n
  7. 1 15 ounce part skim ricotta cheese<\/li>\n\n\n\n
  8. 1\/2 cup sugar (Dixie Crystal)<\/li>\n\n\n\n
  9. 1 teaspoon cinnamon<\/li>\n\n\n\n
  10. Apple Filling<\/li>\n\n\n\n
  11. 6 tablespoons butter<\/li>\n\n\n\n
  12. 2 medium apples, peeled, cored and chopped into \u2153 inch cubes<\/li>\n\n\n\n
  13. 3 tablespoons brown sugar<\/li>\n\n\n\n
  14. 1\/4 teaspoon ground cinnamon<\/li>\n<\/ol>\n\n\n

    Instructions<\/strong>:<\/p>\n\n\n\n

    1. In a small bowl, cream together the ricotta cheese, sugar and cinnamon until smooth<\/li>\n\n\n\n
    2. In a saucepan, melt the butter, add the apples, brown sugar and cinnamon cooking 3-5 minutes or until tender<\/li>\n\n\n\n
    3. Remove from heat<\/li>\n\n\n\n
    4. Meanwhile in a medium bowl, mix together all crepe ingredients until smooth<\/li>\n\n\n\n
    5. Heat a large skillet over medium-high heat that has been lightly brushed with oil<\/li>\n\n\n\n
    6. Pour 1\/3 cup of batter into skillet and swirl around, covering the entire bottom<\/li>\n\n\n\n
    7. Brown for 1 minute or less before flipping by lifting one corner and then flipping, continuing to lightly brown the other side<\/li>\n\n\n\n
    8. To assemble crepes — place 2 tablespoons ricotta filling in a line in the center of the crepe, followed by 2 tablespoons apple mixture and roll leaving the ends open<\/li>\n\n\n\n
    9. Top with an additional dollop of filling, apples and sprinkle with powdered sugar and cinnamon<\/li>\n<\/ol>\n\n\n
