So with winter coming to an end here, citrus really brings spring to mind. Something new and fresh! I’m not going to lie…. I actually had to look up the definition of a “winter salad”. There’s also some winter salad recipes there as well! As I browsed through recipes to get an idea, one ingredient was always popping up. Citrus.
I just so happen to have grapefruit setting on the counter that I have been too lazy to peel and decided…. yup, grapefruit vinaigrette! Something new… something different…. something delic! Toss it with spinach and orange slices and you’ve got yourself a very light salad that would work as a main or a side!

Add a light, citrus packed salad to your daily meal with this Spinach Citrus Salad with Grapefruit Vinaigrette!
Ingredients
- 3–4 cups spinach
- 1 grapefruit, cut into segments
- 1 orange, cut into segments
- 1/2 red onion, thinly sliced
- Vinaigrette
- 1/2 cup fresh grapefruit juice
- 2 tablespoons olive oil
- 1 teaspoon dijon mustard
- 1/2 teaspoon ginger
- 1 teaspoon honey
- 1/8 teaspoon sea salt
Instructions
- Place the spinach in a bowl with the grapefruit and orange slices. Add the onion.
- In another bowl, whisk together the vinaigrette.
- When ready to serve drizzle or toss the vinaigrette over the spinach and citrus.
- Serve!
